adobada tacos and baja style fish tacos done right are some of my favorites. The correct color of salsa is always the house recommendation.

You're welcome. I think any culture + Mexican culture is a good combo. I know there a big Korean community in the northeast part of Mexico, we have Mennonites in Chihuahua, and at some point there were some Chinese people that made it to Baja California but they changed their last name and adopted Mexican customs. I'll have to dig more and maybe write about it.

Never underestimate the gringas! Lol. Walther, Paradise Valley burger at 40th/Bell makes a “competition style” taco that I order whenever we go. I’ve never even had one of their famous burgers because I always get the taco. Go and let me know what you think. I love the sound of all those tacos that you shared. Yum!

That's funny, I've never had their tacos. I'm probably biased because of the name of the place. If you say you're a burger place, what are you doing selling tacos? But you're making me rethink that.

1) I'm more familiar with al pastor, but that's likely because my dad is from Mexico City.

2) Street tacos are the only tacos I will accept.

3) Yes.

I had a Lebanese roommate in grad school, and we bonded over similar upbringings despite having different backgrounds. I'm sharing this post with her.

1 - love tacos al pastor/de trompo. It might actually be my favorite style. There's a really good place near me just called Trompo. They actually were named a best new resturant by Bon Appetit when they first opened.

2 - not the best in terms of quality, but after a night out the tacos at Fuel City were always the best. It's a 24 hour gas station/taco stand in Dallas. You see people from every walk of life and socio-economic spectrum. I call it the UN of Dallas.

3 - both are right but I'll almost always opt for the green sauce.

Also, I am just now realizing that the Lebanese-Mexican connection is like, very Catholic sounding... Are you aware of whether hay muchos (Maronites) en México? I know St. Charbel is super popular among Mexicans.

Yeah, I know a couple Mexican Maronites. I made the connection with St. Charbel recently. I first heard of him around 2008 and it was weird that a Lebanese saint had such a stronghold in Mexico but then it made more sense.

When I was up in Big Sky, Montana last summer there was a wonderful place called the Taco Bus run by a local Mexican family. I went there twice and didn't get any tacos but I did have a lovely total and a shrimp ceviche. The (red) salsa was the spiciest I'd ever had which isn't necessarily saying much given my German-Irish background but it was delicious

I had some good tacos yesterday with flour tortillas, although I generally (strongly) prefer corn. Any particular view on this one? Corn seems superior, but it's also not like a hard and fast rule.

I think there are some taco fillings that are better in corn, some that are better in flour and some that it doesn't matter because both of them are good. Better in corn for me would be: Taco Gobernador (beer battered shrimp), Taco de Cochinita Pibil (pork in achiote sauce). Better in flour: Taco de Cabeza or Barbacoa, or really any filling that may be saucier, the flour tortilla would be "stronger" and absorb some of the juices before it breaks. This is main reason behind the double corn tortilla in street tacos, so your taco doesn't bottom out. And good in either one: Carne asada, eggs & potato, chile relleno.
