I've always been intimidated by risotto. On a scale of 1 to 10 where 1 is easy and 10 is extremely difficult, how hard is it to cook risotto?

3 or 4. I was intimidated too. You just need to have everything ready to go before you start cooking since it goes pretty quickly. Once I finally gave it a try and realized how easy it is I made it every couple of weeks to get the technique down. Once you’re comfortable with the technique you can try different variations. Just choose a simple recipe at first like mushroom or asparagus.

thank you for the seltzer recommendations! We love Bubly and Waterloo brands... I'll have to go to some of the fancier stores around here and see if I can find the Asian flavors, because my entire family is obsessed with Asian food. My parents found a La Croix mint julep-flavored seltzer last year, and it become one of my favorite flavors of the summer.
